Who says Easter eggs have to be hard-boiled and finger-staining? Not I. I eat hard-boiled eggs on a weekly basis. BORING. Try something new this year! These rice krispie Easter eggs are easy enough for the kids to help out with and will be just the thing your Easter table needs for the perfect holiday EGGs-travaganza. (Sorry, I just HAD to.)
Ingredients
7 oz. Marshmallows
1.5 oz. Butter
3.5 oz Rice Krispies
For strawberry flavored add:
.5 oz chopped dehydrated (or freeze-dried) strawberries
A few drops of red food coloring
For blueberry flavored add:
.5 oz. chopped dehydrated (or freeze-dried) blueberries
A few drops of blue food coloring
For chocolate flavored add:
1 oz. chopped chocolate chips
Directions
- Whisk together the butter, marshmallows and other ingredients (if making a flavored version) over medium heat until they have melted together completely.
- In a mixing bowl, fold the Rice Krispies into the marshmallow mixture.
- Let cool until the mixture can be handled without causing immense pain to your hands. When it is cool enough to handle, shape the mixture into small egg shapes.
- What I did to make the coatingĀ is I first melted a little more marshmallow and butter in a pan and brushed it over the krispie eggs. I then put whatever I wanted to roll it in (here I used colored sugar crystals and crushed oreos) into a bowl and rolled the egg back and forth until fully coated.
